Traveling along Highway 31, 40 km East of Bac Giang city, you will come to Thu Duong village, Nam Duong ward, Luc Ngan commune and get impressed by the Nam Duong’s rice noodle village, which is popular in everywhere around Vietnam.
Thu Duong is just located just a short distance from Chu Town (Luc Luc District). Like many other localities in Luc Ngan, Thu Duong grows quite many lychees, but the main income of the villagers is from making rice noodles.

The first sensation when coming to this land is the white of the drying noodle racks based on the walls surrounding the houses, gardens of each family.
Look to the noodle producing houses in the village of Thu Duong, you will be able to admire the production of the famous noodles of this place.
The production process is meticulous and careful, requiring experience accumulated over many years of the villagers. To create the long, fragrant and tasty noodles, people in the village has to go through a lot of elaborate steps.
Most important is the selection of raw materials. The type of rice used is Thai Hong rice. This kind of rice is grown on the hillsides of Chu Luc Ngan. The special characteristic that makes this rice chosen to be the main ingredient for the famous noodles of this village is because it gives noodles toughness, whiteness, and characteristic aroma.
In the early morning, the noodle makers have to get up early to bring the racks full of newly made noodles out to the yard to dry it under the sun. Rice paper is only dried when it is sunny, if the weather is not favorable, the producers will stop this processing period, otherwise, the cake without being dried under the sun but put into the oven will not guarantee quality.
A batch of noodles usually needs at least three people to produce, each will process a certain period of noodles making. The noodle at first will look like a rice paper, then after being cut into strings, it’ll be put in the package and sold.
Even the rolling and bundling noodles so that the bundle of noodles looks smooth, as beautiful as the bun of a young woman, is also an art that not any noodle maker can do.
As a result of the raw materials, workers are required to perform a variety of processes for more than 36 hours to produce flexible, tough, and delicate noodles.
Nowadays, there are more than 300 households producing rice noodles in Thu Duong village, Nam Duong ward, Luc Ngan commune, accounting for 85% of the village’s households. Among them, more than 100 households participated in Luc Ngan producing and consuming association.
On average, the village produces and consumes nearly 30 tons of rice noodles, of which the Association produces instant noodles and consumes 10 tons, the value of the village is nearly 8 billion VND per year.
Produced by the traditional methods of the village, despite not using food preservatives but Chu noodle is still crunchy, flexible, tough and delicious. This is why rice noodles in Thu Duong are preferred in comparison to other types of rice noodles.
